Ingredients
All-purpose Flour- 500grams (about 4cups)
Sugar-100grams (1/2cup)
Dry yeast(instant)- 2teaspoon (7grams)
Warm water- 350-400ml
Salt- 1/2 teaspoon
Nutmeg (optional) –1/2 teaspoon
Oil(for frying)-Enough for deep frying
Directions
- Activate yeast: (Skip this if using instant yeast)
Mix yeast,1tbsp sugar, and a bit of warm water. Let it sit for 5-10minutes until foamy. - Make the batter:
Mix flour, sugar, salt and nutmeg.
Add yeast (if pre-activated) and gradually mix in hot water until the batter is smooth and stretchy.
Should be thicker than pancake batter but not as thick as bread dough. - Ferment the dough:
Cover with a clean clothe or plastic wrap.
Let it rise in a warm place for 45min-1hr, until it doubles in size. - Fry:
Heat oil up to 1750C(3500F).
Scoop with your hand and drop into the oil.
Fry in batches, turning occasionally until golden brown(3-5minutes).
Drain on paper towel.
